Boeuf Bourguignon in the Crockpot

I found this recipe on this website. I love beef stew, and this is just a variation on the theme.

Ingredients


1 1/2 cups dry red wine
3 T extra virgin olive oil
2 T minced onion flakes
1 tsp thyme
1 T parsley flakes
1 bay leaf
1/2 tsp pepper
4 pounds Stew beef; 1" cubes
1/3 cup white rice flour, superfine
1 tsp Salt
8 slices bacon; diced
2 large onions, chopped
2 garlic cloves; minced
1 pound mushrooms; quartered

Directions

Thoroughly combine first 7 ingredients; add beef and marinate at least 3 hours at room temperature, or overnight in refrigerator. Drain meat reserving 1 cup of marinade. Place meat in removable Crockpot liner; sprinkle with rice flour and salt and toss to coat meat. Fry bacon; fry onions in bacon fat until slightly brown, add garlic and fry for 30 seconds; remove onions, garlic and bacon with slotted spoon and add to meat in liner. Saute mushrooms in remaining bacon fat (add butter or olive oil if needed...avoid butter if you are casein free). Remove mushrooms with slotted spoon and add to meat-onion mixture. Pour reserved 1 cup of marinade over all. Place liner in base. Cover and cook on low 8-10 hours, or high 4-5 hours.

  1. Any ideas what to substitute for the flour to make this recipe gluten free? Are you no longer following a gluten free diet?

    I'm a little confused by your comment, because in the ingredients list, it clearly says:

    "1/3 cup white rice flour, superfine"

    so when I refer to "flour" in the directions, of course I mean the white rice flour that I listed in the ingredients above. I will edit to make it more clear, though.

    As to following a gluten free diet, I have to follow it for the rest of my life. I don't have a choice...gluten makes me deathly ill.

    Every recipe on this site is 100% gluten free.

  4. As far as I know, the only brands of bacon that contain gluten are Farmer Johns, certain brands of turkey bacon and the bacon used by MacDonald's. This info comes from a thread on celiac.com:

    Hormel and Oscar Meyer are generally safe; Oscar Meyer is a Kraft brand, and Kraft has a policy of listing all of the top allergens on the label if any are present. I use Hormel pepperoni too.

    That being said, ALWAYS read labels, and if you're still not sure, contact the company directly!

  6. Hi Beth! I have found white rice flour at Trader Joe's, Whole Foods Market, and even "regular" grocery stores like Fred Meyer and Vons. Asian markets carry "glutinous" rice flour (which is gluten free in spite of the ominous name)....it's also called sweet rice flour. Sweet rice flour actually thickens sauces better than the regular rice flour, so it works quite well in this recipe! In fact, if you use sweet rice flour you might want to use a little less, maybe 1/4 C instead of 1/3?

    If none of your local markets carries rice flour, ordering from Amazon may be the best option.

    Yes, I think you can use pretty much any type of gluten free flour with this; as I mentioned in an earlier comment, I've come to prefer sweet rice flour because it thickens better than most other gf flours.
